The Chimes' Bourbon Marinade Recipe
This marinade is occasionally (special occasions) used for cooking ribeyes at The Chimes Restaurant & Tap Room in Baton Rouge, Louisiana.
Ingredients
- 1/3 cup Makers' Mark
- 1/4 cup brown sugar
- 1/4 cup Colibrí pepper mash
- 1/3 cup Worcestershire sauce
- 2 tbs dijon mustard
- 2 tbs minced garlic
- 3 tbs olive oil
- 3 tbs red wine vinegar
- 1 tsp salt
- 2 tbs freshly ground black pepper
Directions
Mix ingredients thoroughly and marinate rib-eyes in refrigerator overnight before grilling over very hot grill. Baste steaks with excess marinade as they are grilled.
Substitution
If you aren't The Chimes, you probably cannot get Colibrií® pepper mash. Instead, substitute one 5oz bottle of Colibrí® Pepper Sauce for the pepper mash and vinegar.
